Elderberry Syrup with Warming Spices

Ingredients:
- 4 cups fresh elderberries (2 cups if dried)
- 4 cups water
- 1 cup raw honey
Optional ingredients
Cinnamon stick, ginger, cloves, star anise, cardamom, peppercorns,brandy
Instructions:
1. In a medium-sized saucepan combine all ingredients
2. Bring the mixture to a boil over medium heat.
3. Once it reaches a boil, reduce the heat to low and let it simmer for about 45 minutes to an hour, or until the liquid has reduced by about half.
4. Remove the saucepan from heat and allow it to cool and come together more.
5. Mash the elderberries using a spoon or a potato masher to release more of their juices.
6. Once the mixture has cooled, strain it through a fine-mesh strainer or cheesecloth into a clean bowl, pressing gently on the berries to extract as much liquid as possible.
7. Compost the elderberry pulp and let the liquid cool to room temperature.
8. Measure the final amount and add half the amount of honey to the liquid and stir well. You can add your brandy in here too if using.
9. Transfer the elderberry syrup into a clean, airtight glass jar or bottle.
10. Store the elderberry syrup in the refrigerator for up to 4-6 months.
Usage:
- Take one to two teaspoons of elderberry syrup daily as a preventative measure during cold and flu season. Increase the frequency to every 2-3 hours if feeling under the weather.
- You can also mix the syrup into beverages, such as tea or smoothies, or drizzle it over pancakes or yogurt for added flavour and health benefits.
